Peach Rum Preserves


6-8 fresh peaches

1/2 cup sugar or to taste

1/3 cup Portside Silver Rum

1 tbsp lemon juice (optional to keep color)

Dice peaches, skin and all and toss into a medium size sauce pan.  Turn flame on med/low.  Add sugar, rum and lemon juice.  Cook for about an hour or so, stirring regularly and mashing at least once with a potato masher.

Remove from heat, let cool and enjoy over ice cream, cottage cheese or on pancakes!  MMM MMM GOOD!
